Working at the Ivy Collection was probably the most challenging experience of my career. I was part of the team that had to contend with the initial restaurant opening and influx of guests. As Norwich’s premier dining experience, staff often had to contend with 400+ covers a day. On my busiest shift we had well over 500+ covers.
To those unfamiliar with the world of hospitality, 500 covers is a huge amount. Particularly given that team behind the bar never exceeds three people (more often two). Thats roughly 333 drinks each to craft, mix, prepare, and serve.
This level of intensity requires an extraordinary amount of communication and teamwork. It has taught me a great deal about working within a team, under immense pressure, and consistently performing to the highest standards. We are expected to do this without giving an outward indication of the effort we are expending.
My secret is that I place value on the people within the team regardless of their job title. Each and every member has my full support and I will always do my utmost to ensure they looked after.
